For our Terre del Faro preserves, we use only freshly picked organic fruit from our own farms in the Metaponto area, so they taste as authentic as preserves used to. Their creamy, fruit-rich texture comes from the high proportion of fruit. How do we thicken them? Simply by using more fruit! Cooking at low temperature without air helps retain flavour, colour, vitamins and minerals.
